Cooler Meat Sauce

Serves 4-5
Ingredients 1 lb lean ground beef 1 yellow onion, chopped 3-4 garlic cloves, diced 1 green pepper, chopped, 1 red pepper, chopped, 2 cups mushrooms, sliced 1 large can of tomato sauce 1 large can of crushed tomatoes 1 can of tomato paste 1 bunch of fresh basil (or 3 tbl of dried) 1 bunch of cilantro (or 3 tbl of dried) 3 tbls of balsamic vinegar 1 tsp sugar Salt, pepper, and tabasco to taste InstructionsIn a large frying pan, brown the beef, 1/2 the onion, and garlic. Pie Iron Pizza

Sliced bread (as many pieces as needed)
Sausage, pepperoni or ham
Grated cheese
Onions
Green pepper
InstructionsSpread tomato paste onto slices of bread, add sausage, pepperoni or ham, and sprinkle with grated cheese, top with onions and green pepper, place in pie iron and cook over campfire until cheese is melted. The best and safest way, is to wait until you have a bed of low coals in your fire pit, then proceed.

IngredientsContinue Reading1 1/2 lbs. lean ground beef
3/4 cup sour cream
1/3 cup sour cream
3/4 cup grated onion
1/4 tsp. nutmeg
1 Tbsp cooking oil
InstructionsMix all ingredients, except oil together. Wet hands so meat does not stick. Form into patties, this is enough to make 8 regular sized patties or 12-15 slider sized patties at 3/4″ thick. Place formed patties on parchment paper and refrigerate 1 hour. Brush each patty well with oil and grill over a bed of low coals.

IngredientsContinue ReadingChicken pieces – breast, wings and ribs work best
For each 4 pieces of chicken use:
– 1 tsp Soy Sauce
– 1/4 cup Pineapple juice
– Tbsp Chopped parsley
– Small grated onion
InstructionsDepending on the amount of chicken, adjust recipe. Make sure you have enough sauce to completely submerge the chicken in a zip lock bag.
Place chicken on a well oiled grill over low coals and use marinade to brush often during cooking. A good rule of thumb is that a cooked chicken is one that has been cooking on the grill at 5 minute intervals and flipped and basted four times. Always check for doneness as cooking times may vary with each grill.
