  • Cooler Meat Sauce

    For chili, spaghetti, sloppy joes, basically EVERYTHING!

    Serves 4-5

    Ingredients 1 lb lean ground beef 1 yellow onion, chopped 3-4 garlic cloves, diced 1 green pepper, chopped, 1 red pepper, chopped, 2 cups mushrooms, sliced 1 large can of tomato sauce 1 large can of crushed tomatoes 1 can of tomato paste 1 bunch of fresh basil (or 3 tbl of dried) 1 bunch of cilantro (or 3 tbl of dried) 3 tbls of balsamic vinegar 1 tsp sugar Salt, pepper, and tabasco to taste Instructions

    In a large frying pan, brown the beef, 1/2 the onion, and garlic. Drain and set aside. In a separate soup pot, add all other ingredients except the fresh basil and cilantro. Cook on medium heat for 15 minutes. Add beef mixture, fresh basil and cilantro...

  • Pie Iron Pizza

    Ingredients

    Pie iron

    Sliced bread (as many pieces as needed)

    Sausage, pepperoni or ham

    Grated cheese

    Onions

    Green pepper

    Instructions

    Spread tomato paste onto slices of bread, add sausage, pepperoni or ham, and sprinkle with grated cheese, top with onions and green pepper, place in pie iron and cook over campfire until cheese is melted. The best and safest way, is to wait until you have a bed of low coals in your fire pit, then proceed.

  • Russian Beef Patties

    Ingredients

    1 1/2 lbs. lean ground beef

    3/4 cup sour cream

    1/3 cup sour cream

    3/4 cup grated onion

    1/4 tsp. nutmeg

    1 Tbsp cooking oil

    Instructions

    Mix all ingredients, except oil together. Wet hands so meat does not stick. Form into patties, this is enough to make 8 regular sized patties or 12-15 slider sized patties at 3/4″ thick. Place formed patties on parchment paper and refrigerate 1 hour. Brush each patty well with oil and grill over a bed of low coals.

  • Chinese Chicken

    Ingredients

    Chicken pieces – breast, wings and ribs work best

    For each 4 pieces of chicken use:

    – 1 tsp Soy Sauce

    – 1/4 cup Pineapple juice

    – Tbsp Chopped parsley

    – Small grated onion

    Instructions

    Depending on the amount of chicken, adjust recipe. Make sure you have enough sauce to completely submerge the chicken in a zip lock bag.

    Place chicken on a well oiled grill over low coals and use marinade to brush often during cooking. A good rule of thumb is that a cooked chicken is one that has been cooking on the grill at 5 minute intervals and flipped and basted four times. Always check for doneness as cooking times may vary with each grill.

  • Stirfry

    Serves 4-5

    Ingredients 3 chicken breasts cut into 1 inch cubes 1 yellow onion, diced 2 cloves garlic 1 green pepper, cut bite size 1 red pepper, cut bite size 1 zucchini, cut bite size 1 cup mushrooms, sliced Fresh basil/oregano (brought from your garden) or a shaker of Italian seasoning 2 tbs of soy sauce 2 tbs of BBQ or teriyaki sauce Instructions

    This is another recipe that the ingredients (veggies) can be chopped at home and put into one container (like a lock and lock container so it doesn’t spill). Just use within 2 days or mushrooms will start to brown.
